There is more than one way to skin a cat, (corny i know) any who fake hair pulling, well you mentioned videos and unless the video (like crystal films) shoot real, ruled catfights or a company shoots a hair pulling fight , you don't see much "real hair pulling", just as any model wants her face to remain unmarked none want to end the shoot with a head ache short of migrant or a clump torn out and  a bald patch left, the women in the average video have to make a living , just like if you were to see dancers at a club do oil wrestling they aren't going to really slap hard or punch  knowing the next day they have to dance and show up with bruises and such as mentioned, as far as how to pull hair?, best most painful style is as close to the scalp as you can and in most cases grind your knuckles on the skull as you pull that will get a scream or wide eye watery eyes every time, wrapping hair in your hand and around it is great for control and whipping your opponent around, naturally 2 handed pulling has more control but if one hand is your only option as you have to slap, punch ,claw back (talking real no rules ) then you hold on wit hall you got to that scalp, longer hair, can have an advantage in that if your hair is pulled towards the ends your opponent has to stretch her arms till you feel the pull and it is fully effective, but the down side if your hair isn't up long hair gets grabbed at any point for the fight , shorter hair, is the direct opposite tough to get a full grip as it is close to that woman face she will react to the hand reaching at her , but if you get a death grip on it you control her head and tear a good amount out, now brings us to hair not really being pulled but to hold your opponent in a position yet have a firm grip on her hair, example is say a breast fight, your face to face and your opponent tries to back away or shift position you hold her by the hair to keep her close and in the fight, again in this case controlling her head her body follows where her head is forced, hope this answers what you were looking for.
